I would extremely subscribe to a "all the stuff that isn't fit to print because people don't have the ingredients or the equipment or the technique to handle it" series. (Also loved the chefsteps video; youtube commenters are idiots.)

Thank you for the context of the niban paitan. Believe in your expertise. There's a ton of ignorance on the effort that goes into food. You're part of the inspiration of people understanding ramen and the culture shift towards people appreciating good ramen
